Hi friends! This week was an exciting one for me: my mom came to visit! It’s the first time my mom has ever stayed with ME and I was so excited to show her our life here in Georgia and our home. And I of course loved seeing her fall in love with Carl!

And here is what we cooked up this week:

Monday – Baked Chicken Tenders with Roasted Kale and White Rice: I roughly used this recipe using panko and Parmesan and think they turned out really well- almost more Asian style than American. I ended up serving it with some homemade teriyaki on the side.

Tuesday – Fresh Linguine with Shrimp Scampi: One of the many joys of having my mom in town was that she whipped up my favorite meal for dinner. This is one of those easy go-to’s that I always seem to forget. It was made even better with the addition of fresh pasta.

Wednesday – Orange Sesame Chicken Bowls: I had a busy day and wanted to make something quick and delicious for dinner. The best part about this dish is that it makes a great next day lunch: I added two scrambled eggs for a little extra protein and was set.

Thursday – Slow Cook Turkey Chili with Cheesy Beer Bread: Another easy weeknight meal. I threw the chili together in the slow cooker early in the day and then made the bread as soon as I got home from work. The great part about this meal is it makes a TON of food, so we load up the freezer with chili for days we don’t feel like cooking.

Weekend- This weekend I am thinking of trying a few new things: these Herb and Gruyere Puffs (in preparation for Thanksgiving), these Candy Bar Blondies (to use up all of our leftover candy) and this Chicken Tikka Masala (which takes a little more time and effort than a weekday meal). I’ll let you know how they turn out!
