A month and a half in Alaska already. Wow!! This weekend, Q and I went on one of our last bike rides around town. I wish we could ride year round, but it looks like we will only get a few more weeks in until the cold really hits.
In other big news, I got a job! I am now a substitute teacher in the local school district. I’ve been thinking about going back to school for teaching for a little while and after talking to some friends here in Fairbanks, they suggested I substitute teach to get a feel for it. So far it’s been incredibly rewarding and a really fun experience. I’m lucky to be busy every single day, but also able to make my own schedule which is really nice especially with Q’s schedule.
And now food:
Breakfast- 8:30AM
The usual oats – for those that don’t know it my special recipe is: 3/4 cup water and 1/2 cup vanilla almond milk brought to a boil/ Add 1/3 cup Coach’s Oats and 1 teaspoon chia seeds
and reduce heat to low / When almost ready, add 1/4 scoop vanilla protein powder
/ When ready, remove from heat, top with strawberries, almond butter
and a sprinkle of salt and enjoy.
Lunch – 2:00PM
I brought lunch with me to school today. My favorite salad: firm tofu, lettuce, cranberries and soy ginger dressing!
Dinner – Monday
Since Q was in the field, I made a Meatless Monday treat! I baked tofu sprinkled with spices, roasted a small potato, 2 carrots, and a handful of brussels sprouts and made some brown rice and called it a day. It was delicious and the sort of meal I had been craving!
