What I Ate Wednesday: Alaska Week 5!

It’s officially Fall up here in Fairbanks. Leaves are everywhere, the temperature has dropped to below 40 every day  and I officially packed up my high heels and sandals until the Spring time :( . The last thing on my bucket list for this Summer/Fall is to see the Northern Lights. Apparently on a clear night we can see them around 11PM if we are looking, but since we go to bed at 9:30, I guess that will have to wait until this weekend!

Food today!

Breakfast- 9:00AM
Oats and coffee. The other day I posted on instagram about how I freeze strawberries if I have too many. I take off the tops, cut the strawberries in half and place them on a baking sheet and pop them in the freezer for 30 minutes. I put the frozen strawberries into a ziploc and this way they don’t all stick together! When I forget to buy berries at the market (or they cost an arm and a leg in Alaska), I pop the frozen berries in the oatmeal while it’s on the stove and viola!
Lunch – 1:30PM
We had ground beef tacos last night. Tacos are about the only time I eat red meat and Q, my lover of red meat,  gets SO excited he basically stares while I eat it.
I used the leftovers today over a corn tortilla sprayed with olive oil and popped in the toaster oven for 10 minutes at 375, basically creating a hard tostade shell.
To make these fun hard taco shells we used last night, microwave corn tortillas for 30 seconds then spray each side with olive oil and pop on the backside of a muffin tin. Bake for 10 minutes at 375. 
Snack – 3:30PM

I wanted to try a little baking challenge today and baked donuts. These cinnamon sugar babies were delicious. I took one bite and am leaving the rest for Q to take in to work!
Dinner – Monday 
We wanted an easy and quick weeknight meal, so we went with one of my favorites: Linguine and Clams in White Wine Sauce! And yes we cheated and used spaghetti instead! This is a 30-minute meal and never disappoints!
