Hola Wednesday! I didn’t know it, but all of my food today was Mexican themed. I love when I can actually eat Mexican food and have it be healthy. I had a good time in the kitchen today and now am ready to catch up on “The Bachelorette” from Monday and hit the sack! (And yes it is 8pm in LA and I am already counting down until bed!).
Breakfast – 8:00AM
Huevos Rancheros my way – one warm corn tortilla topped with black beans, salsa, avocado and a fried egg sprinkled with salt and pepper. It was delicious and super filling.
Lunch – 1:30PM
Chicken Fajita Salad and Tortilla Soup
Pre-Dinner Swim – 5:30PM
I went to work early so wasn’t able to do my usual morning workout. I was happy that I was able to stop by the pool on the way home for a quick swim before dinner.
Dinner – 7:00PM
When I got home I was STARVING, so this little concoction came to mind of quinoa, black beans, roasted tomatoes, salsa, cilantro, avocado and some lime juice (full recipe to come later!). This totally hit the spot, although next time I would think about adding some tofu or a fried egg to the top for some added protein.

Looked in my fridge earlier..saw leftover quinoa, tofu, and spinach. Googled how to put it together to turn it into an exciting dinner and first hit was a recipe from your blog. You’ve got lots of wonderful ideas and recipes!! and it was really great for me to hear about someone else doing the long distance thing….I started tearing up reading your posts While my situation is different, I live in Australia and my boyfriend lives in the states (getting my masters here) and weve been doing long distance for almost a year and a half now. Its so hard. Too hard at times, but I know that I dont have a choice and I just need to finish and power through and thank you for the inspiration. congratulations for making it through and it must be amazing to be with him again!!

That dish has a ton of protein in it already – in the avocado, black beans, and quinoa is actually what is called a “complete protein”. If you feel like this meal wouldn’t satiate you for long, try adding sunflower seeds or pepitas
