Summer Eats

Summer dishes to me are fresh, light, veggie-filled meals.

My mom has always been an amazing homegrown tomato grower, so it is no surprise that I have become a huge tomato lover. During the summer, it is rare for me to make a dish that doesn’t include fresh tomatoes.

These are some dishes I’ve made recently that have been really superb. Enjoy!

Lemon Asparagus Couscous Salad with Tomatoes – a great, easy side dish!

Brown Butter Oatmeal Chunk Cookies – Summer is about fresh, but it is also about freshly baked cookies… I love keeping a batch of cookies in the freezer for unexpected house guests.

Lemony Spinach and Orzo Salad – Another great side dish. Light, healthy and easy to put together!

Feta and Chive Sour Cream Biscuits– These puppies were sinful. We grow fresh chives in our backyard, and I loved how this recipe incorporated them. YUM. IMG_8612

Corn and Cherry Tomato Salad- This was a last minute creation after I realized I had 5 heads of corn I needed to cook! This is what it took: Kernels from three heads of cooked corn, 1/2 box of cherry tomatoes, 1 tablespoon minced red onion, 1 teaspoon chopped basil. For the dressing: juice from 1 lemon, 3 tablespoons olive oil, salt and pepper. Mix together and serve. Adding some type of cheese, like feta could also work well here!IMG_8717

And now onto the tomatoes…

My first night home, my mom produced this incredible tomato and burrata salad. There is nothing more delicious and more simple than a whole bunch of homegrown tomatoes and fresh burrata cheese.

We had my all-time favorite recipe in the whole world: Summer Caprese Pasta with homegrown tomatoes, mozzarella and spaghettiIMG_8736

And when we returned to Georgia, my tomato plants had finally started producing, so a simple Caprese Salad for lunch it was! I roughly cut my tomatoes, add mozzarella, basil, olive oil, salt and pepper and call it a meal.IMG_8814

Caprese salads are the best! I keep meaning to make one since I have basil and garlic growing in my garden, but I always forget. Thanks for the reminder. 🙂
